Sedimentační index je číslo udávající v mililitrech objem sedimentu, který vznikne za specifických podmínek ze suspenze zkoušené mouky v roztoku kyseliny mléčné. Využívá se jako jeden z parametrů pekařské jakosti pšenice dle normy ČSN ISO 5529.
